Tajima Kuro is a special brand of Tajima beef raised by Ueda Livestock Farm in Kami-cho, Hyogo Prefecture.
Among the general "Tajima beef" breed and brand, cattle raised with meticulous attention to feed and breeding environment are called "Tajima Gen."

🥩 Characteristics of Tajima Gen
A key characteristic is the low melting point of its fat.
While the fat of typical Japanese Black beef melts at around 25°C, Tajima Kuro fat melts at around 12°C.
This is the result of meticulously calculating the essential amino acids and nutrients needed by the cows in their feed, and consistently maintaining an optimal environment for their stomachs.
