They are raised at a contracted farm, Ueda Livestock, and only about 10 are shipped per month.
Tajima beef, which is raised on a special diet and has fat with a low melting point, is called "Tajimaguro."

While the fat of regular Japanese Black beef begins to melt at around 25 degrees, "Tajimagen"
It starts to melt at about 12 degrees.
The fat that melts at low temperatures is smooth and similar to tuna fat.
When you put it in your mouth, the umami flavor of the meat spreads and you can feel the sweetness of the meat.

At Ueda Livestock, we use our many years of experience and research to provide our animals with lots of love, high-quality feed, and an appropriate environment.
Our motto is to raise our children healthy above all else.

The results of the ingredient analysis also showed that it has a low melting point and a low content of oleic acid, which is a flavor component.

Ueda Farm

President Ueda's life as a cattle farmer began with 12 cows in Muraoka, Kami-cho, Hyogo Prefecture.

Immediately after graduating from high school, he began raising cattle with 12 Tajima cattle inherited from his grandfather.
Currently, the farm has nearly 1,000 cows.
It is now said to be the largest ranch in Hyogo Prefecture.
The reason for this is that they practice "integrated breeding," which is rare across the country.
Consistent rearing means that calves born on a farm are raised on the same farm until they are shipped.

Usually, they are divided into two groups: breeding farms and fattening farms.
After the breeding farmers raise the calves until they are about nine months old, they put them up for auction.
It is a two-stage system in which calves purchased at auction are raised by breeding farmers until they can be shipped.
They manage both on one farm.
